Healthy Superbowl Nibbles

The big game is upon us, and regardless of who you’ll be cheering on Sunday, the odds are that you’ll definitely be enjoying tons of party snacks and maybe a drink or two…..or more if you’re still reeling from your team not making the cut(sorry Dallas).  Each year, millions of Americans gather to watch the game and chow down–if that last bit has you fretting about your waistline, fear not! I haven’t written much about my daily eating habits, but Mr. Jay and I tend to be quite the healthy eaters.  We also LOVE to cook.  So naturally, our healthy meals consist of a little more than bland steamed veggies and dry chicken!

It started out as an obsession with brunch when we first started dating and has evolved into every meal. And snacks.  And desserts. Today I’m sharing our Superbowl LI line-up with you guys! It includes a few tried and true go-to party snacks, as well as new recipes that we’re stoked to try on Sunday!  In the menu below, I’ve listed everything we’re preparing, and I’ll discuss the recipes we’ve previously tried and loved. I’ll also report back next week to let you guys know how the new recipes ended up! I’ve also linked the other recipes, so you guys could give them a spin yourselves if you like!

Crispy Rice Treats{sans sugar and gluten}

After many rave reviews, we will also be trying the Buffalo Cauliflower that is all over Pinterest.  Although it isn’t suggested in the recipe, I will be making the Crispy Rice Treats into blue and red balls(in case it wasn’t clear who we were rooting for)!

Mini Naan Pizzas
You’ll need:
2 pkg. Stonefire Whole Grain Naan{each pack contains two pieces}
Sauce{we use HEB Healthy Marinara, but Classico Tomato Basil is also great!}
Shredded Mozzarella
Toppings{we use a variety–cherry tomatoes, spinach, fresh basil, grilled chicken, turkey pepperoni, jalapenos, bell pepper, mushrooms–whatever your heart desires!}
Heat the oven to 450. Cut each piece of Naan into fourths.  Lightly brush both sides with olive oil and toast for a couple of minutes.  Once removed, add desired amount of sauce, cheese and topping. Return to oven and monitor until cheese begins to brown (about five minutes). Remove and enjoy!

Naan pizzas are a dinner staple for us and this smaller, bite-sized version is perfect for Superbowl snacking. My favorite version is simply Naan, tomato, mozzarella, basil, and topped with a touch of balsamic. Jazz them up any way you like, I promise you’ll not regret these!

Baked Tortilla Chips
You’ll need:
8 Tortillas of your choice{our go-to are whole wheat, but corn is also great!}
Extra Virgin Olive Oil
Sea Salt
Heat the oven to 450. Slice tortillas into wedge shaped pieces.  Brush each side lightly with olive oil, and place on pan.  Season lightly with sea salt. Baked for 10-12 minutes(watching closely for desired browning) and voila!
